1. Cheesy Cheese Ball
Ingredients:
- ¾ (4-oz) blocks cream cheese
- ½ c. cheddar
- 4 slices bacon
- ½ teaspoon garlic powder
- ¼ c. pecans, chopped
- ½ teaspoon paprika
- ¼ c. chives, chopped
- 9 pretzels sticks
- Kosher salt
- Black pepper, crushed
Method of Cooking:
- Cook bacon for 8 minutes in a nonstick pan. Drain and let it cool completely. Now chopped finely and keep aside.
- Combine cheddar cheese, softened cream cheese, paprika, garlic powder, salt and freshly crushed black pepper and mix it well.
- Now make 9 small balls with the cheese mixture by using a ice cream scoop and place it on a baking sheet lined with parchment paper. Now rest these balls on the refrigerator for at least 1 hour to set.
- Combine finely chopped bacon, chopped chives and chopped pecans in a bowl and stir to mix it well.
- Now roll the balls on the mixture of bacon-chives-pecans and insert a pretzel sticks into each ball. Take off the balls from refrigerator 12-15 minutes in order to come to the room temperature before serving. Serve immediately and if its late to serve then wrap the balls loosely with plastic wrap and place on fridge.
2. Antipasto Cups
Ingredients:
- ½ c. ciligine
- 12 slices salami
- ½ c. grape tomatoes
- ¼ c. artichoke hearts
- ¼ c. black olives
- 2 tablespoons basil
- 1 teaspoon red wine vinegar
- Kosher salt
- Black pepper, crushed
Method of Cooking:
- Spread a salami slice on a muffin tin in order to make a crisp salami bowl. Now place the muffin tins on a pre-heated oven on 375 degree and bake for 10 minutes. When the salami slices becomes crispy take off from the oven and let it cool completely. After 10-15 minutes when the muffin tin becomes fully cool, very carefully take off the crispy salami bowls from the muffin tin.
- In the same time prepare the filling. Combine quartered grape tomatoes, cut into halved black olives, basils, vinegar, artichoke hearts, salt and freshly ground black pepper in a bowl. Gently toss and mix it well.
- Now take the cool salami cups and spoon the filling on the cups and serve to enjoy the different taste.
3. Asparagus Bacon Brie Bites
Ingredients:
- ½ lb. asparagus
- 4 slices bacon
- 3 oz. wheel of brie
- ½ (4 oz.) tube crescent dough
- ¼ lemon
- Kosher salt
- Black pepper, crushed
- Flour, for rolling dough
- Cooking spray for pan
Method of Cooking:
- Over medium heat cook bacon for 8 minutes. Drain and keep aside.
- Cook asparagus, seasoned with salt and freshly ground black pepper on the same pan on the leaving fat of bacon. When it becomes slightly soft remove from heat and pours lemon juice over it. Let it cool. Now chop bacon and asparagus into 1” pieces.
- Now cut the brie into 2” pieces.
- Spread a bit of flour on a plain surface and make a rectangle with the tube crescent dough. Cut the dough into 12 equal squares.
- Now place the squares into the greased muffin cup and then fill with cooked bacon, brie and asparagus and bake for 15 minutes in a 375 degrees pre heated oven. Take off from oven when the crescent becomes golden. Let it cool and serve.
4. Tomato Basil Pepperoni Puffs
Ingredients:
- 2 sheet puff pastry
- 1 cup parmesan
- Pepperoni slices, depends on the number of appetizers you make, take 2 slices for 1 appetizer
- 3 tomatoes
- Basil, freshly chopped
- 2 egg yolks mixed with 2 teaspoon water
- Salt and pepper as required
Method of Cooking:
- Take a baking sheet. Line parchment paper on it carefully. Now roll out the puff pastry sheets and cut 9 squares on each sheet.
- Place a tomato slice on each square of the sheets. Now add 2 pepperoni slices, parmesan, salt, freshly ground pepper and chopped basil over the tomatoes. Now fold the opposite edges of each square and try to make the shape of a little boat.
- Brush the egg yolks on the pastry and place the pastries on the refrigerator for 15 minutes.
- Now place the pastries on a preheated oven on 360 degrees and bake for 20 minutes. When the cheese melts and the pastries are golden and puffed take off from the oven. Serve quickly and have fun.
